For 2 persons:
- 250 G of ground beef
- 1 Small onion, finely chopped
- 1 Bunch flat leaf parsley candied
- 1 Tablespoon of paprika
- 1 Teaspoon ground cumin
- 3 Tablespoons olive oil
- 30 Cl of crushed tomatoes
- 25 Cl water
- 2 Eggs (one per person)
- Salt
- Pepper
- Preparation : 15 mn

The steps of the recipe:
Preheat the oven to 210oc. In a bowl, mix the minced meat, onion, parsley, half of the paprika, cumin and a pinch of salt. Mix well and then make the meatballs the size of a walnut.
In a tajine, a pot or a frying pan, pour the oil, tomato coulis, the rest of paprika and cumin. Add salt, pepper and mix well. Let simmer for 2 minutes.
When the sauce Fremit, gently put the meat balls, any stirring until they are entered on the outside. Put your preparation in a mold, tajine or terrine and breaking eggs on the dumplings.
Bake for 10-15 minutes, until the eggs are cooked. During this time prepare the accompaniment.
To finish ... I used spinach to accompany this dish but you can easily replace by couscous, quinoa, bread ...
